I ordered the 10 lb of wings to get us through the NFL playoff season. Did a trial run with 2 lbs, cut off the tips and separated wing and drumette tossed them in a bowl with (avocado) oil and seasonings, then roasted them in a 350 degree oven on a rack over a foil-lined sheet pan for 40 minutes, turning halfway through. Made a wing sauce using 1/3 stick unsalted butter, melted, 1/2 cup thai chile sauce, a dash of fish sauce, coco aminos, and agave nectar. Removed wings from oven and tossed them in the bowl to coat them then returned to oven for 10 minutes to set the sauce. The flats and drumettes were both meaty, juicy and flavorful!
