What is a Pork Hock?
This cut comes from the bottom half of the pork leg and is made up of a chunky bone surrounded by collagen, connective tissue, and some meat, all encased in a thick layer of fat and skin.
What can I do with a hock?
They can be cured with salt and smoked, so they'll provide bacon flavor to whatever you add them to. You may smoke or grill them, as well as make incredible soup with them.
