  • Meat thermometer
Ingredients
  • 1 Ā½Ā poundsĀ ground beef
  • 1Ā egg
  • Ā½Ā onionĀ chopped.
  • Ā½Ā cupĀ shredded mozzarella
  • Ā¾Ā cupĀ almond flour
  • salt and pepperĀ to taste.
  • 2Ā tablespoonsĀ Swerve BrownĀ (optional)
  • 2Ā tablespoonsĀ prepared mustard
  • ā…“Ā cupĀ sugar-free ketchup
Instructions
1.Ā In large bowl, combine beef, egg, onion, cheese, and almond flour. Season with salt and pepper to taste.
2.Ā Place in lightly greased 5x9 loaf pan, OR form into loaf and place in lightly greased 9x13 baking dish.
3.In a separate bowl, combine Swerve Brown (optional), mustard, and ketchup. Mix well. Pour over meatloaf.
4.Ā Bake at 320Ā° Fahrenheit for 50 minutes to 1 hour, or until internal temperature reaches 155Ā° Fahrenheit. Let rest 5 minutes, then slice.
