2 pounds ground alligator meatĀ 

1 eggĀ Ā 

1 tablespoon saltĀ Ā 

1 teaspoon ground pepperĀ Ā 

1/2 teaspoon ground nutmegĀ Ā 

1/2 teaspoon cayenne pepperĀ Ā 

1 teaspoon fine chopped garlicĀ Ā 

12 slider buns, toastedĀ 

Toppings of choice: Alligator Sauce, recipe follows, caramelized onions, American cheese, seasoned aioli, arugula, tomatoes and thin-shaved raw onionsĀ

Alligator Sauce:Ā 

1/3 quartĀ prepared horseradishĀ 

2 1/2 cups mayonnaiseĀ Ā 

1 cup sweet chili sauceĀ Ā 

1/2 cup teriyaki glazeĀ Ā 

1/3 cup steak sauceĀ Ā 

3 tablespoons Creole mustardĀ 

3 tablespoons hot sauceĀ Ā 

3 tablespoons Worcestershire sauceĀ Ā 

1/2 bunch fresh parsley, choppedĀ Ā 

Ā 

DirectionsĀ 

  • Combine the alligator meat, egg, salt, pepper, nutmeg, cayenne and garlic in a large bowl. Form the mixture into 2 1/2-ounce patties.Ā 
  • Cook patties in a hot skillet or on a hot grill, 2 minutes on each side.Ā 
  • Place on buns and top with your toppings of choice.Ā

Alligator Sauce:Ā 

  • Combine the horseradish, mayonnaise, chili sauce, teriyaki, steak sauce, mustard, hot sauce, Worcestershire and parsley in a large bowl and mix until emulsified. Keep refrigerated.Ā
